Summary:
This batch was infected, and thrown away. I discovered something wrong when I felt part of the lid was loose on one side as I was preparing to start bottling. Also, when I pressed down on the lid to force a bit of air through the airlock, there was a very bitter, almost lambic odor–not a good sign. After I opened the lid I saw the tell-tale mold spores floating on the top. A real bummer.
Still, this is the only batch in 4 years of brewing where infection has occurred. At least all the descriptions of what I had read about infection were verified here, so I am confident that it’s not too hard to spot an infected batch after all.
